Zucchini sauce for winter - for sandwiches or other dishes.


This delicious zucchini sauce is perfect for sandwiches, meat, potatoes, or porridge. Thanks to its rich flavor and aroma, as well as the addition of vinegar and spices, it will be a wonderful addition to your table throughout the winter. Ingredients:
- peeled zucchini - 2.5 kg;
- onion - 700 g;
- salt - 3 tbsp.;
- sugar - 190 g;
- tomato paste - 700 ml;
- 9% vinegar - 180 ml;
- ground paprika - 1 tbsp. with a mound;
- chili pepper - 0.5 tsp.;
- ground coriander - 0.5 tsp.
Instructions:
Cut the zucchini and onion into large pieces, place them in a large pot with a thick bottom.

Add salt, sugar, tomato paste, spices, and vinegar. Stir and bring to a boil.

Boil over medium heat for 40-50 minutes, stirring occasionally.

Then blend the mixture with an immersion blender until smooth. Bring to a boil again and cook for another 5-7 minutes.

Sterilize the jars in the oven: spread clean jars on a rack, heat to 120 °C, then turn off the oven and leave the jars inside.

Pour the hot sauce into dry sterilized jars and seal immediately. Store in a cool place.
